So last night I posted a picture on instagram of some healthy cookies and cookie dough that I made for my sweet husband. In the time it took me to heat up the oven I had made the cookies from scratch and also rolled the rest of the dough into balls for later on this week, because cookies right out of the oven are just too good :). Just goes to show it doesn’t take all day to makes something yummy for your family from scratch. A couple friends asked for the recipe so here is it. It is adapted from the better homes and garden cook book, which by the way I LOVE!
Easy Chocolate Chip cookies
1 cup butter, softened (or you can use coconut oil for dairy free)
1 cup packed brown sugar or succanut
1/2 sugar or succanut
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 teaspoon vanilla
2 3/4 cup whole wheat flour (or you can use non bleached or all purpose or mixture of them all 🙂 )
2 cups of semisweet chocolate chips ( I use the non dairy chocolate chips)
Instructions: Heat oven to 375, then mix together butter (or coconut oil), sugar, baking soda and salt together with a beater. Then beat in eggs and vanilla, then add flour. Stir in chocolate chips. Roll dough into balls. Bake for 8-10 minutes. The cookie dough balls freeze AMAZING so most the time I make a double batch and freeze them until we need a quick dessert. Hope you enjoy!
